This mainly helps me with fast movements or dripping blood or water so yeah normally you would want the fast one for those but sometimes slow is a good option
And if your animating a fly or some you could combine the two but still I'm not an expert so I'm probably wrong
So with let's say you have a dot ok

The closer you put the dot next to the last frame it'll be slow
But the farther away you put the dot from the last frame the faster it goes :]
