If cookie species have no official sex how are they boys or girls

Cookies are born genderless (like undertale's frisk or Chara) and they decide their gender later in life (but they don't have genitals lol) and their body unconsciously adjusts to how they want it to be.

During the timeskip Mr Cookie shortly tried to see what being a girl was like, and immediately turned back cuz funny. He told Cris about it, and Cris was bored and wanted to see what his best friend looked like as a female for fun, so fast forward a week and the drawing happens lol
